How to Cook chicken halves?

It is quite simple to prepare Chicken Halves at home. You just need an oven at a high temperature to get good browning on the outside of the roast. Thereafter, bake it at a lower temperature to make sure the meat in the center doesn't get burnt to a crisp.
 


Method:

1. Salt the roast and let sit at room temp:

Take the beef roast out of the fridge 3 hours before you want to start cooking it. Salt the whole thing and let it still for a while, loosely wrapped in butcher paper. Before putting roasts in the oven, they should be brought close to room temperature so they cook more evenly.

2. Tie with kitchen string:

If your butcher hasn't already done it, cut the bones off the roast and use kitchen string to tie them back on. This will make it much easier to cut the roasted prime rib and you can still cook it by standing it up on the rib bones.

3. Preheat the oven and season the roast:


Set your oven's temperature to 500°F (or the highest temperature it can reach, if that's less than 500°F). Salting the roast ahead of time should have made it release some water, so use paper towels to dry it and then salt and pepper it all over.

4. Place the roast fat-side-up in a roasting pan:

Place a meat thermometer that can be used in the oven in the thickest part of the roast. Make sure the thermometer is not touching a bone. Because there are so many things that can change how long something takes to cook, you should use a meat thermometer. The price of a prime rib roast is too high to just wing it. If the roast is too rare for your taste, you can always put it back in the oven for a few more minutes.
